Subway Restaurants Implementing Traceability Since traceability is a key component of TRXio, we are constantly looking for examples to illustrate its positive impact on supply chain efficiency. We recently wrote about Starbucks’ journey to traceability, a pilot program that tracks the “bean to cup” journey. In addition to Starbucks, we also learned that Subway, which has nearly 30,000 franchise-owned restaurants in North America, is attempting to implement traceability. What is Traceability? In a nutshell, traceability tracks the movement of an individual item from its origin to the end of its useful life, offering data on who comes into contact it along the way. This allows businesses to know exactly where products are, who is handling them and how to increase the efficiency of item movement processes. According to its website, “GS1 provides a framework for real-time tracking, traceability and supply chain optimization.” Subway is attempting to achieve traceability through GS1,  a nonprofit organization that provides a “common language to identify, capture and share supply chain data– ensuring important information that is accessible, accurate and easy to understand.” While GS1 standards are frequently used in the food industry, they are also utilized in the retail, healthcare, transportation and logistics and technical industries. GS1 barcodes, which are scanned more than six billion times every day, provide a standard for the food industry. According to an article with an interview in Supply Chain Scene, Executive Spotlight,” Lucelena Angarita, Subway’s Director, Supply Chain Traceability, Independent Purchasing, says that when issues arise, Subway uses unique identifiers to locate products. The company also uses GS1 standards to capture and share data.

Scanning for Traceability

In the Supply Chain Scene article, Angarita also mentions that “98% of Subway’s products now have traceable barcodes and 94% of suppliers are now sending daily shipment data from their plants to the distribution centers. Additionally, distributors are making their scans available to 9,100 Subway restaurants. The scanning also provides access to lots of valuable data.
